Chilli: how hot can YOU handle?

Some like it hot. The Welsh like it hotter. Take a look at the hottest chilli sauce around. But be warned … this is not for the faint hearted.

If adding a bit of spice to your life is your thing, you’re in the right place. Chris Fowler grows over 700 different types of chillies, the largest range in the UK.

And with so many varieties it’s no wonder he’s managed to come up with a recipe that will, quite literally, set you on fire.

His UFO sauce contains the deadly Carolina Reaper, which holds the Guiness World Record for hottest chilli in the world, reaching 2.2 million Scoville Heat Units.

It’s a super hot chilli!! It’s the hottest I’ve made,” said Chris. “I make at least 12 types of sauces every year from 20 different chillies.”

The work begins in December when he germinates the seeds in 78°F in his polytunnel at Cefn Mably Farm in St Mellons. Watering them regularly he is able to plant them in May and by November the chillies are ready to be picked.

His brother, Pete, who does the branding for the Super Furry Animals, is in charge of designing the labels. Once all the creative recipes are bottled Chris sells them at local farmers markets and at the farm’s shop, Moody Sow.
